While I’m on the subject of walnuts (I think I might have gone a little walnut crazy lately), I’m going to share a recipe for amazing Vegan Walnut Pancakes. Like I’ve mentioned in my Oatmeal Cookies Post these could just as easily be Blueberry or any other kind of fruit, nut or vegan chocolate.
Ingredients (organic / vegan versions):
- 2 cups whole wheat flour
- 3 tbsp raw sugar
- 3 tbsp baking powder
- 1 tsp sea salt
- 2 cups soy milk
- 3 tbsp canola oil (optional)
- 1 cup raw walnuts
Combine the dry ingredients in a bowl and mix together. Add the wet ingredients and mix until the batter is smooth. Ladle the batter onto the hot pancake griddle. Add walnuts (or other optional ingredients). Cook for 2 to 3 minutes on each side. They are so delicious!
