Since my Vegan Breakfast post I’ve been trying to make breakfast more interesting. I also have been making grocery shopping more of a scavenger hunt to find any and all vegan products to try. In my search I discovered So Delicious Coconut Milk Blueberry Yogurt. I never really paid yogurt any attention before I was vegan because I didn’t like the taste of it, but I really love this coconut milk yogurt.

So Delicious yogurt also comes in Strawberry, Vanilla and Chocolate. I like them all. The Blueberry variety has the most beautiful color and is so sweet and tasty. While making breakfast we had a visitor, my lovely little Lola.

We adopted Lola in 2008 from the Animal Defense League, a No Kill shelter on the northeast side of San Antonio. She was so tiny and friendly. At the time we were looking for a companion for our adult cat Toby, who was taken in from a dangerous car inspection shop. They got along great, but a two years later Toby ran away and never came home. Then a year later Otis, a stray we also had found at the local library got sick and had to be put down. Lola is now kept under a watchful eye and yes, she got a quick taste of the Blueberry yogurt.

We also added walnuts to the granola. There are lots of vegan-friendly granola varieties at the store, we just picked the generic store brand. You can also make your own granola which I plan on trying soon.
