Ingredients: Whole Wheat Penne Pasta, Canned Red Beans, Canned Chickpeas/Garbanzo Beans, Black Olives, Fresh Spinach or Spring Mix, Newman’s Own Olive Oil and Vinegar, Vegetable Broth, Red Chili Flakes, and Salt to taste.
As I mentioned in my previous post, the hubby and I don’t really use measuring cups when cooking. We boiled the pasta and sautéed it together with what we had of the above listed ingredients. It was hearty, but still light and delicious. Hope you enjoy!

I love cooking by instinct, without measurements or ratios! I really don’t do that often enough – I do when I’m cooking for myself, but when I’m at home and making bigger quantities I tend to rely on set recipes more. But this sounds awesome, I love the inclusion of olives!

We don’t often cook for more than 2 or 3, but I’ll follow recipes when trying something new. Then we’ll make it from memory the next time. I have to give the hubby all the credit for the olives, we’ve really been spending a lot of time in the kitchen together.
