On Christmas Eve my Mom and I baked vegan treats to share with our friends and neighbors. We made Banana Nut Muffins, Pumpkin Oatmeal Cookies, and Peanut Butter Cookies. I substituted Pumpkin Puree for Sweet Potato Puree in the Pumpkin Oatmeal Cookies. I filled a Penguin Holiday Tin with cookies for our friend Karl Frey and his family and made a few Mason Cookie Jars for friends.

My Mom said everyone loved the cookies at work and our friends really loved them too. Baking cookies is a fun tradition I hope to continue, who doesn’t love an edible gift? More Christmas joy to come!
