Making it rain!

This past Sunday was my 26th Birthday. I celebrated by making a delicious dinner with Mark and my family. I was subconsciously inspired by a VegNews Magazine article featuring amazingly delicious Vietnamese sandwiches called Banh Mi. We made our own version with Tofu marinated in ginger, lemongrass and soy sauce (which Mark cooked to perfection), fresh cilantro, cucumbers, avocado, and a packaged slaw mixed with vegenaise, all on a french bread roll. My Banh Mi was one of the best sandwiches I’ve ever eaten. Sarah made a jalapeno hummus in my brand new food processor, which I’m pretty excited about. She also baked my chocolate Birthday Cake and went to town with the sprinkles. It was a really nice Birthday Dinner. Thanks to Mark, Sarah, Mom, and Travis for making my Birthday special!

Today I’m having a post-birthday lunch with Mark and my bestie Jerry. We’re also getting ready for a business trip to New York. I’m so excited to see my best friend Jen, take a run through Central Park, visit MoMa, and eat at as many vegan-friendly places as possible.     Happy belated birthday!! I would say more, but you’ve distracted me with houmous and reminded me how much I miss it. GODDAMMIT, NOW I HAVE TO SPEND MY WEEKEND TRACKING DOWN CHICKPEAS IN NAGASAKI, THANKS FOR NOTHING.
