Last night we made Vegan Chocolate Mug Cakes. I had never heard of a “Mug Cake” before last night, but I’ll try anything to get my sweet tooth fix. Happy Herbivore posted the recipe on her blog to promote her latest Vegan Cookbook Everyday Happy Herbivore. I used Whole Wheat Flour, Raw Sugar and Enjoy Life Chocolate Chips in my recipe. It was quick and easy! I needed to microwave my cakes closer to 4 minutes and a drizzle of vegan chocolate syrup didn’t hurt. Next time I’m thinking of adding Coconut Flakes and Walnuts. That’s one way to cheer up a dark, rainy day!
