I have these memories of making Rice Crispy Treats with my Aunt Eleanor as a child. She knew how much I loved them and would make them for me when we visited, but I mostly remember making them with her in my parents kitchen. I can’t remember the last time I had Rice Crispy Treats, so it was about time I found a vegan version. This 5 Ingredient Vegan Rice Crispy Treats Recipe from Healthful Pursuit was just what I was looking for – simple, fast, and delicious.
I couldn’t find the unsweetened sunflower seed butter, so I substituted vegan Smart Balance. I would recommend putting them in the freezer for several hours or overnight. Maybe it was my substitution, because although they cut well, they fell apart from the heat of your hands. Either way, they were so tasty and easy to make. Happy Friday everyone!

When I ate them the next day (and the two days after that), they were as solid as you expect a rice crispy treat to be, so I think more refrigeration is the key! They were so yummy!
