We slept in today and when we woke we watched a documentary about Jeff Lynne of Electric Light Orchestra, made some lunch, and are in the middle of No Direction Home. We took a break to learn a song I posted on our Inspiration Tumblr yesterday – Real Estate’s Easy. Our lunch was inspired by a side dish we made for Thanksgiving which consisted of Roasted Vegetables with Peanut Sriracha sauce.
Roasted Vegetables with Sriracha Peanut Sauce
Ingredients – Vegetables
3 potatoes
2 handfuls of baby carrots
1 small onion
6 cloves of garlic
1 head of broccoli
1 green pepper
Ingredients – Sriracha Peanut Sauce
2 tbsp olive oil
1 tbsp soy sauce
1 tbsp sriracha
1 tsp peanut butter
Chop the potatoes, carrots, onion and peel the garlic. Toss the vegetables in olive oil, and sprinkle with salt. We add Italian seasoning too. Spread the vegetables on an oiled baking sheet and roast at 450 degrees for 20 minutes. Chop the broccoli and green pepper toss with olive oil and salt. Take the vegetables out to turn and add the broccoli and green pepper. Roast for an additional 20 minutes. Whisk the sauce ingredients together and pour over the roasted vegetables in a large bowl to mix. Serve over rice. Enjoy!
The rest of our day will be spent watching movies, playing songs, checking off to-do list items, and slowly getting back to editing projects. We have lots of new things happening in our lives right now, and I’m just trying to get things in order.
