The hubby was very proud of our combined efforts making Tofu Noodle Soup for dinner a couple of weeks ago. We even made it again the following evening for my sister Sarah and her husband Travis. The new parents brought little baby Lillian over for the first time, which made me very happy. I think the soup was a hit, and now Mark has been testing out new soup recipes. He even cooked a Miso Soup for dinner tonight – I always help by chopping all the vegetables.
Recipe: The soup above was made with tofu (drained and sliced), mushrooms, green onions, ginger and garlic cooked together in vegetable broth and miso. We also added sriracha and sesame oil for more flavor. Pretty simple and delicious.
We’re heading to Houston again this week. We were there just last week filming with artist Soo Sunny Park. We really enjoyed working with Sunny. Her work is amazing and she made us feel like we became good friends in the short time we were there. Speaking of new friends, we also got to meet up with Emily Link, an artist we met in Houston while accepting our Idea Fund Award. She is a fellow vegetarian, and we had a lovely dinner at Loving Hut. It took forever to get there, but it was worth it! Looking forward to more vegan adventures in Houston!
