I’m a vegan blog enthusiast, that’s for sure (links!). But, I also follow lots of non-vegan food blogs as inspiration. Many of them feature vegetarian-friendly or “veganizable” dishes. When I see something that’s too delicious to pass up, I pin it to my Veganize This board on Pinterest. I borrowed the idea from fellow vegan blogger Cara Lynne Livermore and her veganize it board on Pinterest. Such a good idea! It does however, take a little trial and error to veganize a recipe, but I’m up for the challenge! This is my first installment of my new feature – Veganized it!
Chocolate Oatmeal and Peanut Butter Sandwich Cookies
Adapted from A Cozy Kitchen
Cookie Ingredients:
1 1/2 cups unbleached all-purpose flour
1/4 cup cocoa powder
1 cup vegan butter at room temperature
1 3/4 cups organic brown sugar
2 flaxseed eggs (Learn how to make flaxseed eggs)
2 tsp pure vanilla extract
1 1/4 tsp salt
1 tsp baking soda
2 3/4 cups old fashioned rolled oats
Peanut Butter Frosting Ingredients:
2 tbsp vegan butter at room temperature
3/4 cup powdered sugar, sifted
1/2 cup creamy natural peanut butter (no sugar or salt added)
3 tbsp almond or soy milk
1/2 tsp salt (or to taste)
Preheat your oven to 350°F. Mix together the flour and cocoa powder in a medium bowl and set aside. In a mixer cream together the butter and sugar until light and fluffy. You can also mix the butter and sugar together by hand in a large bowl for 1-2 minutes. Mix in the flax eggs, vanilla extract, salt, baking soda, and oats, scraping down the sides of your mixer bowl as needed. Fold in the flour and cocoa powder mixture by hand until combined completely.
Line a baking sheet with parchment paper and drop balls of cookie dough onto your baking sheet using a 2-inch cookie scooper. The cookies should be placed 2-inches apart. Flatten each cookie slightly and place the baking sheet in the oven to bake for 10-12 minutes. Remove the cookies from the oven and transfer them to a cooling rack.
Mix together the peanut butter frosting ingredients in a medium bowl until combined completely. Spread the frosting on the bottom of a cooled cookie and top with a second cookie. Enjoy!
