Vegan Chocolate Chip Pancakes
Time to eat!
I may have eaten chocolate chip pancakes four days in a row while trying to perfect this recipe. It was totally worth it. What I’m saying is the hubby and I have eaten a lot of pancakes so that I could share this recipe with confidence. Yes…that’s why I’ve eaten 20 pancakes in the last week.
Vegan Chocolate Chip Pancakes
makes 4 – 5 pancakes, serves 2
Dry Ingredients
1 cup whole wheat flour
1 tbsp baking powder
1 tsp ground cinnamon
pinch of salt
Wet Ingredients
1 cup almond milk
1 tbsp vanilla extract
3 tbsp maple syrup
Additional Ingredients
1 cup vegan chocolate chips (I use enjoy life brand)
additional maple syrup for serving
canola oil for greasing
Combine dry ingredients in medium bowl with pouring spout. Mix wet ingredients in separate bowl and pour the wet mixture into dry mixture. Gently stir the ingredients together until just combined, do not overmix. The batter will be a little lumpy. Oil a skillet and heat to medium. Pour 1/4 of the mixture onto the heated skillet, and using a spoon to gently spread the mixture out to pancake shape. Sprinkle vegan chocolate chips evenly on top of the pancake. Once bubbles appear, flip the pancake over. Let cook until both sides are browned. Repeat three times, adding more oil to skillet if needed. I keep the pancakes warm on a plate under a kitchen towel. Serve with warm maple syrup. Enjoy them for breakfast, lunch, dinner, or dessert!

This recipe is so delicious and easy! The easiest vegan recipe I’ve found. I can make it for breakfast and not have to get up extra early. Plus, it didn’t call for any specialty ingredients, I had all the ingredients in my cupboard already. Thanks!

I only use this recipe now and I have tried at least twenty different ones. But these get thick and fluffy with a bit of the taste of a crepe, due to the sweetness. Thank you so much, Troy.
