Here’s something delicious to brighten up your Mondays! I’m just assuming your Monday needs brightening. Maybe it doesn’t, but either way it’s time to bake some awesome vegan chocolate chip cookies!

When I created my Recipe Page I was surprised I hadn’t shared a recipe for the most popular cookie of all time – Chocolate Chip. Again, I’m assuming it’s the most popular cookie of all time. It is in my head anyway.

Vegan Chocolate Chip Cookies

  • 1 flax egg (1 tbsp flaxseed meal mixed with 3 tbsp warm water)
  • 1/2 cup vegan butter (I used Smart Balance)
  • 3/4 cup organic sugar (I use Wholesome Sweeteners Fair Trade Organic Sugar)
  • 1 tbsp molasses
  • 1 tsp vanilla extract
  • 1 1/4 cup all-purpose flour (I use King Arthur Brand)
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/2 cup vegan dark chocolate chips

Prepare your flax egg by mixing the flaxseed meal and water together in a small bowl and allow it to set in the fridge. In an electric mixer or a stand mixer beat the vegan butter until fluffy. Mix the sugar and molasses together in a small bowl to create your brown sugar (you could also use organic brown sugar). Add the brown sugar to the butter and mix until creamy. Mix in the flax egg, which should have a gooey consistency once it’s set. Add the remaining ingredients and mix until combined. Gently fold in the chocolate chips. Drop onto prepared baking sheet using a 1 inch cookie scoop. Bake in a preheated oven at 350° for 10 to 12 minutes. Remove from oven and place the cookies on a cooling rack. Or just eat them right off the baking sheet.

These cookies are my hubby’s new favorite. He compares them to Great American Cookies, which I’ll take as a compliment. We’re getting back into running. The overcast weather makes the nearby trails pretty inviting. Hope you have an awesome Monday!
