I had to take a (big) bite – they are so moist!
Happy Monday everyone! Today I’m sharing one of my favorite accidentally vegan recipes from my Vegan Recipes Pinterest Board. It’s easy and the cupcakes come out moist and delicious. I made some adjustments like using apple cider vinegar and vegan chocolate chips. Check it out:
Vegan Chocolate Cupcakes
Makes 24 Cupcakes
Dry Ingredients
2 1/4 cups unbleached flour
2 cups organic sugar
1 cup cocoa powder
2 tsp baking soda
1/2 tsp salt
Wet Ingredients
1 tbsp vanilla extract
2/3 cup canola oil
2 tsp apple cider vinegar
2 cups water
Optional Ingredients
1 cup vegan chocolate chips (I use enjoy life brand)
1 cup walnuts (not shown)
In a large bowl with a spout stir together the dry ingredients. In a medium bowl with a spout stir together the wet ingredients. Pour and gently mix the wet ingredients into the dry ingredients. The batter should be wet and easy to pour. Lastly, add and gently mix in the optional ingredients. Pour the batter into two prepared cupcake pans, filling each cup up until almost full. I use silicone cupcake liners for easy removal and cleanup. Bake at 350°F for 22-25 minutes. Insert a toothpick into the center of the cupcake, if it comes out clean they are ready to take out of the oven. You might need to check again if you stick your toothpick into a chocolate chip :)
Removed from their liners and ready to eat!
This recipe was pinned and adapted from A Beautiful Mess. They are perfect for Valentine’s served with fresh strawberries, which are very cheap at our local grocery store right now.
They also make for a great edible gift!
The weather is cold again here, so we made my Corn and Potato Chowder for lunch yesterday. It has been very popular with family and friends. My sister even called me yesterday to get the recipe! The chowder is even better as leftovers, so I know what I’m having for dinner tonight. I hope you have a wonderful, warm week!

Thanks! They are delicious and since they are made with more wholesome ingredients, they aren’t as decadent as the average Chocolate Cupcake!
